Zucchini Oven Chips

Things I learned today.
1. Saks 5th Avenue is crazy expensive, even the sale rack!
2. Clothes look different when you try them on at home.
3. Clothes shopping makes me want to eat more vegetables!

Zucchini Oven Chips, adapted from Cooking Light 

1 cup dry breadcrumbs
1/2 c grated fresh Parmesan cheese
1/4 teaspoon garlic powder
1/4 tsp onion powder
1/8 teaspoon freshly ground black pepper
1/3 c 2% milk
3 small zucchini, sliced 1/4" thick
Cooking spray

Preheat oven to 425°.
Combine first 5 ingredients in a medium bowl, stirring with a whisk. Place milk in a shallow bowl. Dip zucchini slices in milk, and dredge in breadcrumb mixture. Place coated slices on an ovenproof wire rack coated with cooking spray; place rack on a baking sheet.

Bake at 425° for 30 minutes or until browned and crisp. Serve immediately with:
Basil Sauce, adapted from Cinnamon Girl Recipes
1/2 cup Sour Cream, light
3 tablespoons Kraft olive oil mayo
1/4 c fresh basil, chopped
1/2 tsp garlic powder
1/2 teaspoon Worcestershire sauce
Combine all ingredients in blender, or in my case, in a Magic Bullet! :)

Yum!

  1. Totally agree on all points. This looks like a yummy snack that's not too terrible on the calories!
